Story of a dish, is the story of Martin O’ Donell, a creative chef which I had the pleasure to follow in Bearna, a village located in Galway Ireland. Martin and his dog walk every day, early in the morning on the beach of Bearna and pick seaweed and sea herbs. He is after the Michelin star while working at West restaurant located in The Twelve Hotel.
